5. In order to achieve optimal texture and flavor from the fish, stress to the fish must be minimized. What steps are taken to minimize the stress in the Crane Bay® Atlantic Salmon?
On the transportation from the sea cage to the holding cages, the water in the ship is aerated so the fish receive enough oxygen in tight quarters. Once the fish arrive at the holding facility, they are settled in the waiting cages for 8-10 hours in order to relax and decompress from the trip before they are processed.
